LIECHTENSTEIN: Käsknöpfle

You will be able to prepare this specialty from Liechtenstein according to the recipe of Myriam and Othmar Biedermann-Öhri from the Löwen restaurant in Schellenberg. The recipe was consulted with Alina Brunhart from the Liechtenstein Representation to the European Union.

Do not fear the applesauce! This combination is fantastic. 

Recipe for eight

Ingredients:

  • 600 g flour
  • 8 eggs
  • 100 ml water
  • 1  pinch of black pepper, salt, and nutmeg
  • Appenzeller and Sauerkäse cheeses (you can use hard cow’s milk cheese and salty white farmer’s cheese, like Bryndza – a sheep milk cheese)
  • 1 onion
  • butter

Preparation:

1. Place the three first ingredients into a bowl and knead the dough. Set aside for 10-20 minutes. Then press the dough through a mesh strainer forming small noodles into boiling water with two teaspoons of salt.
2. Once the noodles are ready, combine them with grated cheese in a bowl. If they turn out too dry, add a bit of water or stock.
3. Fry onion rings in butter until golden brown and add to the dish. Serve with green salad, potato salad, or apple sauce.
