Leniwe (lazy dumplings) is one of the most famous Polish dishes. It consists of only a few ingredients and takes just a moment to make. We usually eat leniwe sweet – with butter, breadcrumbs, and sugar, but here we present a savoury version – with Polish mature cheese, salt, parsley, and butter.
Recipe for two
Ingredients:
- 250 g smoked curd cheese (in Poland we eat leniwe made from white farmer’s cheese; you can add some goat cheese or ricotta to the mix)
- 100 g flour
- 1 egg
- sugar or honey, butter and breadcrumbs (if you want to make sweet leniwe)
- salt and black pepper, hard cheese (we used dziugas, but any type of hard cheese will work), parsley, butter (if you want to make savoury leniwe)
Preparation:
- Crumble the white cheese with a fork or by hand, add flour, egg and salt. Knead into a slightly sticky dough (you can add a little more flour, but the more flour you use, the harder they will be).
- Make long, not too thick rolls from the dough, then cut them into dumplings.
- Throw the dumplings into boiling, salted water and cook for 5 minutes, until they float to the surface. Before draining the water, check if they are ready.
- Serve with toppings. For the savoury version – with grated cheese, butter, and parsley, seasoned with salt and pepper, and for the sweet version – with breadcrumbs and butter. Toast the breadcrumbs in a pan, and when they start to brown, add the butter and wait for it to melt. Pour over the dumplings and sprinkle with sugar and raspberries or blueberries.
