Potato pancakes are associated with the traditional cuisine of Central and Eastern Europe, but not many people know that they became popular in the 20th century. The pancakes are quite easy to make and everyone has a different recipe for them. Jitka Štefkova from OSF Nadace sent us her recipe, in which garlic is an important ingredient in addition to potatoes.

1. Peel the potatoes and grate them on a coarse grater. Wring out as much liquid as possible from them. In a bowl, mix them with crushed garlic, salt, pepper, marjoram and cumin.
2. Whisk the eggs with the milk. Add the mixture to the grated potatoes and mix well. Gradually add flour to make a thick but flowing batter.
3. Pour half a centimetre of oil into a hot frying pan. Drop 1/4 cup of batter into the hot oil, flattening it slightly with a spatula until it forms a shapely pancake. Fry until golden brown, three minutes on each side. Drain on paper towels. Taste the first pancake and adjust seasoning if necessary. Repeat until you have used up all the batter.
