ESTONIA: Barley bread (odrakarask)

This recipe was sent by Katrin Enno from Open Estonia Foundation. Odrakarask is a traditional Estonian bread made with kephir which should be best eaten warm topped with plenty of butter.

Ingredients:

  • 1/2 litre buttermilk, sour milk or kephir
  • 300 g barley flour
  • 1 teaspoon salt
  • 1/2 teaspoon sugar
  • 1/2 teaspoon baking soda
  • 3 tablespoons melted butter
  • 1-2 teaspoons of cumin (optional)

Preparation:

1. Combine all ingredients in a bowl and mix well. Line a baking tin measuring approximately 25 x 35 cm with baking paper and grease it with butter. Pour the batter into it.
2. Bake at 200°C for about 25 minutes until the bread will turn golden brown. Serve warm bread with butter.
