The recipe was sent by Fay Koutzoukou from the Greek organization Solidarity Now. It has been taken from the training materials of the ”Work for All” project run by the Association of Parents, Guardians and Friends of People with Autism . The project aimed to integrate people with intellectual disabilities into society by facilitating their access to work. Skordalia is a Greek appetizer, a garlic potato paste eaten with bread.
Ingredients:
- 1 kg unpeeled potatoes
- teaspoon salt
- ½ teaspoon black pepper
- 3-4 cloves garlic
- ½ cup olive oil
- juice of ½ lemon or 3 tablespoons wine vinegar
Preparation:
- Place a pot of water over high heat. Add a teaspoon of salt. Once the water is boiling, add the potatoes and cook for 15-30 minutes, until soft (cooking time depends on their size). Peel the cooked potatoes.
- Combine the olive oil, garlic, lemon (or vinegar), salt and pepper.
- Mash or blend the potatoes and add the olive oil, garlic and lemon. Mix until all the ingredients are combined. The dip is ready.
