LATVIA: Rye bread dessert

‘Cooperation is like friendship – it is sharing laughter and worries, and above all trust and respect. I am sending you a recipe for a traditional Latvian dessert. It is easy to prepare, sweet and energizing, like cooperation and friendship with a foreign partner!’ – wrote Rasa Lazdiņa from the organization Civil-Alliance Latvia.

Ingredients:

  • 6 slices of dark rye bread
  • 12 tablespoons cranberry jam
  • 1/2 tablespoon cinnamon
  • 1/2 tablespoon sugar
  • 200 g whipped cream

Preparation:

  1. Finely grate slices of dark rye bread. You can grind them in a food processor. Sprinkle the ground bread with cinnamon and sugar and fry in a pan over medium heat until the bread dries out and breadcrumbs form.
  2. Mix it with cranberry jam. Put a layer of breadcrumbs with jam in a dessert cup, then a layer of whipped cream. Repeat until you have used up the entire mix.
  3. Put the dessert in the fridge for a few hours to let the flavours combine.
