POLAND: Leniwe dumplings

Leniwe (lazy dumplings) is one of the most famous Polish dishes. It consists of only a few ingredients and takes just a moment to make. We usually eat leniwe sweet – with butter, breadcrumbs, and sugar, but here we present a savoury version – with Polish mature cheese, salt, parsley, and butter.

Recipe for two

Ingredients:

  • 250 g smoked curd cheese (in Poland we eat leniwe made from white farmer’s cheese; you can add some goat cheese or ricotta to the mix)
  • 100 g flour
  • 1 egg
  • sugar or honey, butter and breadcrumbs (if you want to make sweet leniwe)
  • salt and black pepper, hard cheese (we used dziugas, but any type of hard cheese will work), parsley, butter (if you want to make savoury leniwe)

Preparation:

  1. Crumble the white cheese with a fork or by hand, add flour, egg and salt. Knead into a slightly sticky dough (you can add a little more flour, but the more flour you use, the harder they will be).
  2. Make long, not too thick rolls from the dough, then cut them into dumplings.
  3. Throw the dumplings into boiling, salted water and cook for 5 minutes, until they float to the surface. Before draining the water, check if they are ready.
  4. Serve with toppings. For the savoury version – with grated cheese, butter, and parsley, seasoned with salt and pepper, and for the sweet version – with breadcrumbs and butter. Toast the breadcrumbs in a pan, and when they start to brown, add the butter and wait for it to melt. Pour over the dumplings and sprinkle with sugar and raspberries or blueberries.
