Recipe for six
Ingredients:
- 150 g bacon (you can use smoked tofu instead)
- 500 g potatoes
- 250 g flour
- 1 egg
- salt
- 200 g bryndza (sheep milk cheese)
- 200 g sour cream (18%)
- 1 bunch of spring onions
Preparation:
- Finely dice the bacon and fry in a small saucepan until crispy.
- Wash and grate the potatoes on a fine-mesh grater. Add flour and egg. Mix thoroughly.
- Boil water in a larger pot and season with salt. Using a mesh strainer and spatula, squeeze the dough into the water. Mix thoroughly so that the noodles do not stick together. Cook until they float to the surface (about 3 minutes).
- In a bowl, combine the bryndza with the cream. Add the noodles and mix lightly. Serve sprinkled with bacon scratchings and chopped spring onion.
